研究者Eran Segal教授说道,我们选择主要对血糖水平进行研究因为血糖水平升高是个体患糖尿病、肥胖及代谢性障碍的主要风险因子,而我们在对消耗同样饭菜的不同个体中进行研究发现,个体机体血糖水平升高存在着巨大的差异,这就解释了为何相比万能食谱而言,个性化的饮食选择更易于帮助机体保持健康。

科学家们发现,不同个体对单一或复杂饮食的反应存在不同,比如,当进行标准化的葡萄糖餐食后很多个体集体的血糖水平就会瞬间升高,但对于很多个体而言,在其摄入白面包而不是葡萄糖后,其机体的血糖水平也会瞬间升高,研究者的目的在于寻找这背后隐藏的特殊因素,研究人员利用当前研究信息提出了个体化的饮食建议来帮助抑制并且治疗肥胖症和糖尿病。

文章中,研究人员主要对参与者集体的肠道微生物组进行了研究,随后依据多种因素研究者设计出了一种算法,基于个体的生活方式、医疗背景及肠道微生物组组成和功能,来帮助预测不同个体对食物的个体化反应。随后在另外100名参与者的研究中,该算法成功预测了参与者机体应对不同事物所表现出的血糖上升的现象,这就表明这种算法可以应用于新的参与者机体中。

研究者指出,相同的食物在同一个人中影响其机体血糖水平也并不相同,这主要依赖于是否机体食物的消耗是否优先于锻炼或睡眠。在最后一个阶段的研究中,研究人员依据该算法设计出了一种饮食干预措施,该措施可以帮助检测个性化饮食建议对于个体降血糖的效果。研究中志愿者被指定摄入个性化的“健康”饮食一周,而另外的志愿者则摄入“有害”饮食,

“健康”和“有害”饮食含有相同的卡路里,但其在不同个体间却存在一定差异,然而在参与者健康饮食中的特定食物对于其他人却是有害饮食,健康饮食的确可以帮助维持正常的血糖水平,而有害饮食却会刺激机体出现血糖峰值;研究者指出,正因为有健康饮食,才使得志愿者机体中肠道微生物经历着持续的改变,这就表明肠道微生物组或许会被个性化饮食所改变,同时其在个体机体血糖水平的反应上也扮演着重要的作用。
