PLOS ONE:早产儿胃中的母乳和牛奶释放功能性肽的区别

最近的一项研究应用肽类组学,探究了早产儿食用母乳蛋白和补充牛乳蛋白时,胃消化过程中释放的肽。

早产儿中乳蛋白的消化可以释放出功能性肽。然而至今为止,尚未报道其中功能性肽的种类。早产儿通常喂食人乳和牛奶强化剂的组合,但从人乳和牛乳蛋白中释放的各种功能性肽仍未被鉴定。

最近的一项研究应用肽类组学,探究了早产儿食用母乳蛋白和补充牛乳蛋白时,消化过程中释放的肽。研究人员还根据已知功能肽-牛奶生物活性肽数据库评估了肽段的同源性。研究人员分析了肽数据,以解释哪些蛋白酶最可能从亲本蛋白中释放它们。

研究人员在人乳,强化剂或婴儿胃样品中鉴定了来自牛奶和人乳蛋白的5,264种独特肽段。预测纤溶酶是牛奶中最活跃的蛋白酶,而胃蛋白酶或组织蛋白酶D预计在胃中最活跃。肽分布的比对显示人和牛蛋白质之间的不同消化模式。

与已知功能肽具有高度同源性的肽(抗微生物,血管紧张素转换酶抑制剂,抗氧化剂,免疫调节剂等)的数量从牛奶到早产儿胃中有所增加,并且牛乳蛋白比人乳蛋白更高。

因此,来自人和牛乳蛋白的生物活性肽的差异释放可能影响早产儿的总体健康结果。
