新近临床研究表明,与黄薯相比,富含多酚的紫薯可降低餐后血糖和胰岛素血症。
本研究采用随机交叉试验设计,纳入17名健康男性志愿者,食用含有或不含有富含酰化花青素(152mg)和其他酚类物质(140mg)的紫薯提取物(PPE,用水/乙醇/乙酸提取)的黄薯。
 
结果显示,不含乙醇的PPE降低了餐后120分钟之前的葡萄糖(p = 0.019)和胰岛素(p = 0.015)的曲线下面积增量,降低了餐后20分钟(p = 0.015)和40分钟(p = 0.004)的葡萄糖,以及餐后20分钟(p = 0.003)、40分钟(p = 0.004)和60分钟(p = 0.005)的胰岛素。PPE影响了部分研究的90种炎症标志物在餐后的水平;例如胰岛素样激素FGF-19水平在240分钟时升高(p = 0.001)。
综上所述,这些结果表明,PPE能缓解餐后血糖和胰岛素血症,并影响餐后炎症。
