Grasas y Aceites is a quarterly Journal, edited by the Publishing Service of Instituto de la Grasa (CSIC), which includes scientific and technological information on the chemistry, biochemistry, technology, nutrition and, in general, any subject, related to edible fats from any origin. Oils from seeds or fruits, transformations and derivatives of fats and oils, table olive, surfactants and detergents, as well as byproducts and waste waters of the corresponding industries are also covered by Grasas y Aceites.
